About Casa Chimayo

The Santa Fe restaurant, now in its sixth year, is quickly gaining notice for its authentic New Mexican fare, serving locally-sourced ingredients prepared using time-honored methods. The vision at Casa Chimayo is to promote Northern New Mexican culture via its culinary heritage. Each dish tells part of the story of how the Spanish explorers traversed the ocean looking for treasure and the elusive Seven Cities of Cibola.

How they have come to the New World, known as Nueva Espana, melding with the native population of Tlaxcala and the Aztec Indians, to become known as Espanoles Mexicanos. Then finally, how they traveled along El Camino Real, all the way to Northern New Mexico and beyond, to make the people we are today. By sharing the Indian, Spanish and Mexican elements of New Mexican cuisine, we hope to attract a customer base interested in the art, history, heritage and culture that define the "traditional" food of Northern New Mexico.
